Once again, the Salon du Chocolat invited François Daubinet to create a gigantic piece for the opening of the show. The pastry chef chose to use cocoa crystalline, an extremely technical method requiring very delicate temperature variations. His creation represented an immense 6-cubic-meter cocoa butter crystal.

To create this immense crystal, François Daubinet used 250 kg of recycled chocolate from Valrhona factories.
